Ayunta is a small winery located almost 700 metres above sea level on the northern slopes of Mount Etna in Sicily, near the small village of Randazzo, north of the city of Catania. Their aim is to produce wines that best reflect the terroir and the native vines of Mount Etna. The wines convey elegance, balance and freshness, expressing the pure flavour of the terroir and all the differences between each vintage from every single vineyard. Around three hectares of vineyards in total, planted on different parts of the slopes of Mount Etna, where local varieties like Nerello Mascalese and Nerello Cappuccio for reds and Carricante and Catarratto for whites are traditionally grown. The terroir is obviously volcanic, with the presence of rocks and ash, but varies from one plot to another based on the geological history of the volcano's eruptions. Etna Rosso Navigabile is a Sicilian red wine made with a careful selection of 90% Nerello Mascalese and 10% Nerello Cappuccio grapes. After spontaneous fermentation with 18-day maceration, it ages in large cherry and oak barrels for 14 months. Intense ruby red in colour, the nose releases fruit-infused, floral, spicy and undoubtedly mineral notes. In the mouth it is a dry and warm wine with good length and intensity. Interesting combination of sapidity and acidity. A wine suitable for all kinds of occasions that goes very well with red meats.
